Homemade ginger ale

Homemade fermented ginger ale electrolyte beverage.  Very refreshing and tasty on hot days.
  • Slice a handful of ginger into 1/2-1 inches pieces.  I also added sliced turmeric root.
  • Add sliced ginger to 1 quart of water into sauce pan.  
  • Add 1/3 cup organic cane juice sugar.
  • Heat water, ginger and sugar until boiling and turn off heat.  Let cool.  Heat will pasteurize any potential yeasts/pathogens (except botulism spores).
  • After cool, pour into mason jar.
  • Pinch of real sea salt (1/4 teaspoon?).
  • Add inoculant (living cultures) like water kefir, kombucha or raw apple cider vinegar with the "mother".
  • Cover with fermenting lid or cheesecloth and let the ginger ale mixture sit on the counter or cupboard for a few days to get started with fermentation, then transfer to fridge. 

Let continue to ferment for at least a week or more.  Tighten lid when it has pretty much finished to capture carbonation but keep an eye on it and open over the sink!  Jars can explode so take care.  Practice fermentation safety!

Make a new batch when that one is finished by reusing the previous batch ginger and some of the juice.  Add a little bit of fresh ginger for each new batch.  Follow the same recipe above for perpetual homemade ginger ale.  Great for digestion!

Add with fizzy water, plus coconut water for potassium and sea mineral drops for magnesium electrolytes with fresh squeezed lime for refreshing summertime beverage.

Spring Ceviche salad or tacos

  • Slice fish, like scallops, cod or other favorite fish, into small cubes
  • Put fish into bowl and squeeze enough limes to immerse fish.  I also added some kombucha.  Let marinate for at least 15 minutes or even over night to fully "cook".
  • Dice fresh peppers (green bell, red bell, jalapeno), red onion, tomatoes, garlic, celery, cilantro and mix.
  • When the fish is ready, make your salad or tacos.  Add optional fresh ground pepper, avocado and hot sauce.
  • Save the juice from the ceviche to make fizzy lime cocktails.

Sunlight and Vitamin D, not the same thing

  • The benefits of sunlight exposure are about much more than vitamin D.
  • Many studies show that vitamin D supplementation cannot reproduce sunlight’s health benefits. Moreover, excessive vitamin D supplementation can aggravate systemic sulfate deficiency, which will drive calcium buildup in the arteries.

Pickled (lactofermented) boiled eggs

Lactofermented/pickled eggs

Some people use vinegar to "pickle" their eggs.  That works but is not real lactofermentation and I don't believe as healthy as lactofermenting.

If you want real pickled eggs with healthy living enzymes, then try lactofermenting them.  It's super easy.
  • Hard boil eggs.  I found many simple recipes online.  Find the ones that say "easy peeling".
  • After cooled, peel eggs and rinse well.
  • Place eggs with favorite ingredients into mason jars.  I added fresh jalapeno peppers and red onion.
  • Add a tablespoon of sugar and tablespoon of real sea salt.  Sugar will feed the culture.
  • Add your lactofermention culture.  I used water kefir.  Once again you can use kombucha or living apple cider vinegar with the "mother".  It must contain active living cultures.  
  • Fill jar to the top with water and cover with fermenting lid.  Fermenting lids allow carbon dioxide to escape as it begins to ferment.
  • Let sit on the counter a few days to get going and then transfer to fridge.  They should be ready to consume within a week to 10 days.  The longer they sit the more they'll ferment and should get tangy.

Lactofermented Beet kvass

Another batch of organic beet kvass

  • Rinse and slice beets
  • I also added shallots and garlic
  • Put in pan of water with two tablespoons of sea salt and bring to boil. 
  • Boil until beets are tender.
  • Let cool
  • Place beets and juice into mason jars when temp is safe
  • Add extra water to fill to brim if necessary
  • I added several tablespoons water kefir as the culture for lactofermentation.  
  • Let sit on the counter for a couple days and then transfer to fridge.  Ready to consume within a week.

Make sure to add the culture otherwise you may ferment bad bacteria!  Very important!

You could also use live kombucha or live apple cider vinegar with the "mother" to use as the starter.  The live bacteria eat the sugars and convert them to lactic acid.  Make sure it's strongly acidic when it's finished.  Botulism dies at high acidity/low pH below 4.6.  Salt also inhibits bad bacteria, so make sure to use enough.

Beet kvass is considered a blood tonic.  It's great with meals to add digestive enzymes.  Add the fermented beets to a meal as a condiment.  Take a shot any time during the day or if you feel a cold or flu coming on.

Lamb shoulder

I followed a simple recipe I found online.  I used my home grown herbs, rosemary, basil, himalayan sea salt and ground pepper.  I roasted until internal temp reached 180.  It came out medium rare, tender.
