Make sure to add the culture otherwise you may ferment bad bacteria! Very important! You could also use live kombucha or live apple cider vinegar with the "mother" to use as the starter. The live bacteria eat the sugars and convert them to lactic acid. Make sure it's strongly acidic when it's finished. Botulism dies at high acidity/low pH below 4.6. Salt also inhibits bad bacteria, so make sure to use enough. Beet kvass is considered a blood tonic. It's great with meals to add digestive enzymes. Add the fermented beets to a meal as a condiment. Take a shot any time during the day or if you feel a cold or flu coming on.
