I created my own recipes using fresh-milled flour (rye, organic wheat, steel cut oats, oat groats, amaranth, quinoa). I then added the flour mix to the mixed nuts (walnuts, peanuts, almonds, cashews, brazil nut, pumpkin seeds, sunflower seeds).
Then I added water, kefir (or yogurt), and some cream, some raw honey, a bit of real sea salt, and some pumpkin spice to soak over night.
Let soak overnight to help remove anti-nutrients like phytates and begin sprouting process to bring flour and nuts to life. Grains and nuts should be soaked and this is one of the most important steps to bring out the healthful benefits of eating granola.
Next day, I scoop the flour/nut mix into a casserole dish and placed in oven on warm. It is more of a dehydration process and intended to keep the temp at 115 or below. This doesn't kill the living enzymes that aid in digestion. I let it dehydrate for around 12 hours until dried and somewhat crispy. You could also use a food dehydrator.
After completed in oven, I added shaved coconut, dried berries (cherries, cranberries, blueberries). Store in covered container in the fridge.
Enjoy with yogurt, milk and/or cream. Add some fresh fruit like apple or peaches.
Next time, I intend to use more flour for increased volume, and I will also add applesauce and apple slices during the dehydrating process. This will add some more natural sweetness. Try to avoid adding sugar.
I also have avoided using rolled oats for this recipe. The fresh milled flour ends up clumping it together just the way it should be to me and adds some very healthy grain nutrients. Rolled oats are processed and I feel it's best to use fresh ground flour. Use fresh ground steel cut oats in place of rolled oats.
