Let continue to ferment for at least a week or more. Tighten lid when it has pretty much finished to capture carbonation but keep an eye on it and open over the sink! Jars can explode so take care. Practice fermentation safety! Make a new batch when that one is finished by reusing the previous batch ginger and some of the juice. Add a little bit of fresh ginger for each new batch. Follow the same recipe above for perpetual homemade ginger ale. Great for digestion! Add with fizzy water, plus coconut water for potassium and sea mineral drops for magnesium electrolytes with fresh squeezed lime for refreshing summertime beverage.

Some people use vinegar to "pickle" their eggs. That works but is not real lactofermentation and I don't believe as healthy as lactofermenting. If you want real pickled eggs with healthy living enzymes, then try lactofermenting them. It's super easy.

Make sure to add the culture otherwise you may ferment bad bacteria! Very important! You could also use live kombucha or live apple cider vinegar with the "mother" to use as the starter. The live bacteria eat the sugars and convert them to lactic acid. Make sure it's strongly acidic when it's finished. Botulism dies at high acidity/low pH below 4.6. Salt also inhibits bad bacteria, so make sure to use enough. Beet kvass is considered a blood tonic. It's great with meals to add digestive enzymes. Add the fermented beets to a meal as a condiment.
